Nana's Christmas Pudding
50g mixed peel
250g butter
1¼ cups firmly packed brown sugar
4 Eggs
1 Cup Sifted Pain Flour
½ teaspoon each of mixed spice, ground ginger, nutmeg, cinnamon, carb soda
2 Cups fresh breadcrumbs
3 Tablespoons rum, (brandy or orange juice)
1. Mix fruit with Brandy (Rum or orange juice) and stand overnight.
2. Beat butter and sugar together until light and creamy.
3. Beat eggs in one at a time.
4. Stir in fruit alternately with sifted flour and spices and breadcrumbs
5. Spoon into well greased 6 cup pudding basin, bottom lined with a round of buttered greaseproof paper.
6. Cover with two rounds of greaseproof paper and aluminium foil, cut into a large 23cm circle and tie with string.
7. Steam in a covered saucepan with boiling water about ½ up side of basin for 4½ - 5 hours.
8. Remove from water, cool, cover with greaseproof paper and foil.
