Vegetable Soup

 250g Organic Road Soup Mix

Place in large bowl and cover with plenty of water let soak for 8 hours or over night. Drain and rinse. Place in saucepan with 5 cups of water, bring to boil and simmer for 1 hour or until soft.

 Organic Vegetables

  • 2 onions diced
  • 3 carrots diced
  • 3 sticks celery sliced
  • 2 zuchinni diced

Saute vegies in 2 tablespoons of heated olive oil in large stock pot

Add

  • 8 cups of stock
  • 2 x 400g cans organic crushed tomatoes

Bring to boil, reduce heat. Add cooked soup mix and simmer for 1½ to 2 hours. Stir through 2 tablespoons chopped parsley. Season with black pepper and sea salt to taste

Serve with crusty Organic Road Garlic Bread.
